The Gilbert House is a family story—rooted in recipes, raised with care, and lovingly passed from one generation to the next.

Caitlin Erickson, current owner of The Gilbert House, got her start here nearly two decades ago when she moved to Arizona from Philadelphia. Her aunt, Susan Wright, owned and ran the restaurant for over 21 years, welcoming Caitlin in as a server and teaching her everything from how to bake the perfect homemade cinnamon roll to what it truly means to work hard.

After college and starting a family, Caitlin returned to the restaurant that shaped her work ethic and inspired her passion for hospitality. In April of 2025, she officially purchased The Gilbert House, keeping it in the family and carrying forward the legacy Susan built with love, grit, and a deep commitment to feeding people well.

While Caitlin has introduced a few new touches—like a curated cocktail menu—the heart of the restaurant remains the same: a place where brunch is sacred, comfort food is celebrated, and guests are treated like family.

All the original family recipes are still proudly featured—from our homemade hollandaise and sausage gravy to the apple cider sauce poured over our signature Apple Pancakes (Caitlin’s personal favorite when she’s feeling indulgent).

You’ll also find buffalo from Wild Idea Buffalo Company on our menu, featured in both our Buffalo Burger and Buffalo Scramble. The meat is 100% grass-fed, sustainably raised, and comes directly from South Dakota—where Caitlin’s aunt, Jill O’Brien, helped run the business for years. Today, it’s carried on by Jill’s daughter, Jilian Jones, and her husband, Colton Jones, who continue the family’s ranching tradition with the same care and integrity. The result? Flavorful, lean, high-protein dishes that are good for the land and the body.

And if you’ve spotted our craft beer lineup—Ale Wagger, Baja Girl Blonde, Turnout IPA, and Hazing Arizona—those brews come straight from Walter Station Brewery, owned by Caitlin’s dad, Jim Erickson. It’s a family connection we’re proud to pour, and just one more way The Gilbert House keeps it close to home.

At The Gilbert House, we serve food (and brew!) that feels like home—because for us, it is.
